Amarillo by Morning IPA



Simcoe for bittering and all Amarillo late. Delicious.

PS. During brew day I was surprised by a low gravity measurement. I looked around and found a 0.5# of Munich I forgot to add to the mash I subbed in some DME to hit my OG. All’s well that ends well.

Saison Rustic
Brewed in July and split 2 kegs. One primed, one force carbonated. The force carbonated one just had its remains dumped. I’ll never go back to force carbonating. Fresh, I doubt you could tell them apart. 5 months you can tell a difference. Spunding would only be better.

Looks great! I agree on spunding - makes a huge difference. O2 scavenging, foam, preservation of flavors. Not going back either.

It has taken me years to get a handle on the incremental steps to better production. Watching O2, and adding the right mashing steps have paid dividends. I was really surprised how different the 2 kegs were. Not only in taste, but color as well.  Thanks

APA with Centennial, Citra and Amarillo

I think it cleared up nicely considering the 3 oz. of dry hops.  I did a side by side against SNPA.  Mine had a better hop aroma and flavor, but the SNPA had a better finish.  I don't know that I really like Citra that much anymore.

It held up very nice. It was bottle conditioned and has some oxidized sherry notes, but also has caramel and hop bitterness. I’m proud that it is an enjoyable drinking experience after 5 years. Too bad it was the last one.
