Looks kickass, JT !  2565 or 029?
Thanks Jon.  Using 029.
Wyermann Pils malt and acidulated malt only.
Mittelfrueh hops - First wort
Fwiw I preferred the batches with either Spalt or Perle.
Going to mix it up next time on grain bill and either use some carahell or switch base malt to pale malt. Or both.
Great style to brew and just have on tap any time.

Sounds great. I made my last with a mix of pils and kolsch malt. Gonna up the % of kolsch malt next time. It's nice. Kind of similar to Vienna. Makes me want to brew one soon!
Using WY or WLP? Any preference? I've only used WLP but haven't seen a need to change.

Well I prefer 2565 for its sort of 'white wine/white grape' thing. Really good yeast, but it's very powdery and a mother to get clear. Takes a while but worth it. But having said that, it is nice to use 029 and get a clear beer quicker. 029 definitely flocs quicker. I like both.
I like both of these yeasts. Quite different, but one isn’t over the other for me. I split a batch of 5g each, 021, 029, and 2565. Every taster liked a different one. Agree with the wine on 2565. 029 is more Lager like IMO. I like all of them. I find 021 kind of in the middle. Clears well with some character. I could be nuts though.

Here is my 2014 Barleywine. A bit more oxidized than the 2012 and less hoppy. Head retention that lasts for years and I can hardly taste the 10% abv. Creamy and doesn’t finish too sweet.

How in God's name are you saving that many vintages?  Are you brewing one every year?

Yeah, I’ve brewed one every year for the last ten years. I really enjoy drinking them when the weather turns cold. It’s a beer that can age well and fun to compare different years. This bottle had dust, a cobweb and a dead spider on it adding to the provenance.

Had to go back to the Kölsch tonight.  Just such a quaffable beer!

That is a killer looking kolsch. I could drain a liter of that pretty easily. Well done.

It's one of those beers that makes me wish I did 10 gallon batches.  Actually all of the German beers I have on tap right now make me question my batch size.  If it weren't so cost prohibitive to upgrade I'd do it.

I had to, 5 gallons was gone way too fast. If I stopped by and was near that Kolsch keg, you might be thinking a 1 bbl system. Love the style and yours looks as good as any I’ve seen.
