American Pale Ale
2-Row+C60+Centennial+MJ M44

M44 at 66F came out very clean. Hops come through very well and it cleared up very well.

I am going to have to try that with Centennial.  With MJ 44 did you notice a tartness or low pH in the finished beer?

Edit: I just ordered some MJ Bohemian Lager Yeast for an upcoming brewday. I really want to like MJ.

No tartness. It’s hard to say much about the yeast. Its clean and it gets out of the way. I think its similar to a beer brewed with Chico. But, I don’t think it tastes exactly like US-05 or WLP001. I think it is a little less dry and there is a touch more fullness. All that could be from the C60 though.

Double IPA 9.6% ABV  Centennial, Cascade, Mosaic, and Idaho 7 hops.

I just bottled a barrel aged mead.  It was made primarily with a wild flower honey, and I added a little bit of buckwheat.  The barrel was a bourbon barrel from a distillery near me.  This mead is the second one that's been in that particular barrel.

Definitely.  Although now it's more of just an oak-aged flavor coming through.  The first mead was in the barrel for about 4.5 months.  This time I left it in there for 6.  Instead of bourbon and vanilla, it picked up some "woody" and toffee-like flavors.  I think I'm actually going to run this barrel one more time.  Wish I knew someone fairly close who could give it a fresh char.

A Belgian Tripel, in the final stage of clarification

It probably needs another 5-7 days to drop completely clear, but it's progressing nicely and tastes great.  Very happy with this one

Saison, first batch in a long long time. 20 gal batch that was split with 3 different yeasts. 565, Bootleg Saison Parfait, and Omega Saisonstein’s Monster. All are fantastic w subtle differences. Keg/bottle this weekend.

BVIP from 2011! Some loss of carbonation. Was still absolutely fantastic. Couldn’t believe I still had it. It was kept refrigerated the entire time.
