TBS? I think I got a false negative on the test.

Here’s the matured version of the itchy roof of the mouth from weeks ago. Lagers go through so many changes as they mature. Hard part is making them last till they are locked down to a settled beverage.  I have a propensity to boost the ABV,  ( inverts, honey, raw cane) but that stretches out the time till empty. CHEERS

My Iron Taters (sweet potato Club Iron Brew contest fermented with brett) is nearing the end of the keg but has cleared up nicely and the brett has mellowed to a wonderful bright but earthy brew. Gonna miss 'er when she's gone but I'll enjoy 'er while she's here!

That sounds really good, my favourite distilled drinks are from sweet potato and distilled once. Any tasting notes on the sweet potato, and what percentage of fermentables did the sweet potato add?

Honestly, I don't know the specific numbers. It was an iron brew...I chopped up 3 big ole yams, cooked them to some degree, and threw part in the mash and part in the boil. I added some of the cinnamon stick to the grain mill and held some for the end of the boil. I added the bag of marshmallows to the boil. I fermented with an ongoing zoo of brett cultures and dregs. It tasted very similar to a saison made sans the iron brew ingredients but it was fun and delicious

Amazing what time will do! I don't worry about clarity, flavor and aroma are what counts in my book - but I do love it when a brew drops clear!

Far from a recent brew, this is a sour I started a couple of years ago for a buddy's wedding. It's been kegged for a couple of months now. I think I missed the ideal window for packaging - tasted it, was fantastic, waited another month or so, not as fantastic. Time in the keg seems to be improving it though. Tart, dry, vinous fruit. A slight edge of vinegar that just won't age out but seems to continue to mellow. Nice on a hot day!

I have been making some warmer weather beers and looking to make something different.  I had some 'copper malt' on hand and I had not used it yet so I mixed some pilsner, copper malt and just an ounce (in 5 gallons) of Special B.  I heard the copper malt would give you some red and I knew the Special B would as well.   I called it Blonde Redhead but I didn't really get the red.  But the beer is delicious.  Northern Brewer to bitter and then an ounce of Spalt with 5 minutes left and 940 on the yeast.

Looks great. I’ve got a CAP with Saaz on tap right now. These are the perfect summer beers.
