It looks the part! Two hearted is my go-to beer when I’m at my summer place in the Upper Peninsula of Michigan. They go through a fair amount of it at the store in town, so it’s always fresh.

Awesome!  I made the exact same beer with the same yeast.  Mine is currently in the fermenter and won’t be ready for about 2 weeks.

What are your thoughts on the beer? And if I may ask, to what level of carbonation did you shoot for?  My understanding is that this style of beer would have modest CO2 volumes??  ~2?  I may start about there but bump if I think it could use a bit more.  Easier to add then subtract.

I like it a lot. It was a timely brew given the thread here on crystal malt. In the past few months I have done a couple bitters more like TTL that were 100% base malt (with just a touch of black malt to bump up color). I can absolutely say that I like bitters both with and without crystal. This beer is <4% abv and the crystal gives it good body. My all base malt bitters were balanced in that neither the sweetness nor bitterness were pronounced, this one was more Carmel sweetness balanced by a bitter finish. I will endeavor to always have an English pale ale on draft.
I don’t have my carbonation dialed in for this style yet. I keep thinking it needs a little more when I originally sample then slightly overcarb. Your idea to start low is correct and my experience indicates you should try a couple pints instead of a few sips.

And a mead that was made by my buddy's dad.  He wanted to try making mead, and did really well for a first time.  He made the mead by himself.  He added some berries at the beginning, but not enough to come through in the flavor.  I helped him with a couple rackings, back sweetening, and bottling.

Funny story, a little while before we were set to bottle, he had a few too many one night and dropped some anise seeds into the carboy.  I didn't expect to need a straining bag, so i didn't take one with me when I went to his house.  Those darn seeds caused a few headaches by clogging the siphon when we were bottling.  They added a really nice flavor though.  Dualfine was used to clear it up and got it brilliantly clear.
