How so?
First attempt at this style as I’m normally a German pils guy. I think I was afraid it would end up too dry and bitter and maybe compensated too much the other way. It’s still pretty young so hopefully it will improve.

So it's not bitter enough?  It can be a tough style.  My water is not well-suited to it so I often dilute with distilled and then you have the concept that softer water can mute hops so you feel like you have to dial it up and add more hops to make up for it.  Then there are those who say that the Czechs (and Germans for that matter) don't add hops late in the boil.  The Czechs might boil for 90-120 minutes and the last hop addition will be with 60 minutes or maybe 30 minutes left.  I have tasted homebrewer's versions where they see that they need quite a bit of hops because of the soft water but they don't take that into consideration WRT their own water (which might be hard) and the beer turns out super hoppy and coarse.  Lots of variables but I'm a big believer in allowing a lager to age a bit too so fingers crossed.  Na zdraví!

4% Munich ii
2% melanoidin

Magnum/HM @ 45 min
1/2 oz HM @ 30 min
1 oz saaz @ 15 min
1 oz saaz @ 2 min

Pseudo bopils water from bru’n

3470/189 blend
1.051
40 ibu

Since I do shorter boils I used some melanoidin. I think the beer is sufficiently bitter but the balance is just strange. Again that could be due to my affinity for something more dry and crisp. It finished at 1.013.

Looks great. I’ve never made a Vienna Lager with 100% Vienna malt. Let us know how you feel about it because I might have to make one for summer.

To my palate it tastes like a helles turned up to 11. I don't get grassy flavors like Pilsner malt, but that same raw pasta flavor is there and more intense. I like it, but I can understand why the Mexican lagers cut it with corn. Next time I'll probably go 70-30 with flaked corn in the grist.

i know youre a relatively more experienced brewer than i am, but i thought the same thing with my 95/5% vienna/munich, and it mellowed a lot. you might change your mind after a few weeks, if it can last that long.
