Currently on tap (from left to right)

American Wheat (Sundew yeast, late hopped with Vic Secret and Nelson Sauvin)

IPA (Lallemand NEIPA yeast, cryo hop Citra, Simcoe and Amarillo)

Light Bitter (Wyeast Abby 2 - 1762, Styrian Celeia - it's still pretty young and needs some time to clear)

I've been on a very good run lately. I'm in the sweet spot where I'm trying out new ingredients and recipes to scratch my creative itch, but things aren't so out there where I feel like I'm rolling the dice on a potential dumper.

Those all look great.  But I'm curious about that backyard settlement you have going on back there.  Is that where your brewery customers live?  :D

I guess they're my customers, since they eat all my spent grain. That's the coop and run area for my chickens and ducks.

I think the bitter still needs a couple of weeks to clear because I can still taste a bit of the dry hop in suspension. That said, I get fleeting flashes of peach and Bing cherry that could be esters from the 1762, could be hop flavors,  or could be just mind over matter at this point. If I can let this sit for a couple of weeks (big if, since this is about 3.8% and goes down really easy already) then I'm hoping to be able to discern whether it's esters or hop character. Overall though, it is remarkably clean. No phenolics at all, no raisin, possibly just a light stone fruit ester. This would actually probably make a really nice NEIPA.

that's really excellent to hear. thanks. another point towards me trying wlp540/w1762 for a bitter.

i ended up using WLP550 for a well hopped pale ale and i definitely get a tiny flash of raspberry in it. but its phenolic, so different than 540

It paired well with the tropical hops I used. I didn't get a lot of flavor expression from it, but I later learned that I should have pitched a bit on the heavy side and fermented warmer. I'd definitely use it again.

Porter brewed back in July.  It came out with more of a robust porter flavor.
