What was your impression of K97 vs. Koln? I don't care for K97 at all but love Koln so am just curious how you think it stacks up.
For this beer, Koln worked really well, and it definitely dropped clear more quickly. It's a touch cleaner than I recall for K97, but then again I haven't had them side-by-side.
I also have a kolsch on tap made with Koln, and it is really nice. Again, Koln seems to ferment a bit cleaner...which is either a plus or minus depending on how much yeast character one likes.
That said, I really like K97 in my American wheat ale recipes...it's now my go-to versus liquid yeasts, as K97 brings exactly what I'm looking for in this use case.
