Nice looking beer!! I love Edelweiss. It works well in this style among others. I currently have a Vienna Lager and a Czech Lager on tap with Edelweiss. I sure hop Hop Heaven continues making this blend because it is close to being my favorite. Would you mind sharing your recipe? Would like to compare.
This one is loosely based on Jamil's recipe although I'm sure I tweaked it a bit.
44% Vienna
30% Munich Dark
25% Pilsner
1% Carafa III
(for me this ended up being 4.5 lbs of Vienna, 3 pounds Munich Dark, 2.5 pounds Pilsner, 2 ounces of Carafa III)
About 23 IBUs of Edelweiss from the start of the boil
One ounce Edelweiss for 10 minutes
The yeast was Novalager on this one. Ordinarily it would be Omega Bayern, 2308 or 2124.
60-minute single infusion mash at 149.5°
I also added a bit of CaSO4 to the strike water to make sure the finish of the beer was crisp and to make sure it wasn't too muddy.
I agree with you on the Edelweiss. I always have it in the freezer. But it mildly bugs me that I don't know what's in it. This batch I have now (2021) seems like it might hve Saphir in it and though I love all things "German" in brewing, it's not one of my favorite hops. It doesn't come through in this Vienna Lager so maybe I'm wrong. Cheers.
