Thanks, I really like this one. A year old Pale Sour with various critters (ECY Bug County 2014 and multiple bottle dregs) then it sat on over 6 lbs of fruit (pineapple, mango, papaya, and strawberry) for 2 months. I tried to recreate a beer from over a year ago and I think I nailed it.

Yeah, carahell is nice stuff. Gonna use some in a helles and BoPils soon.

Got some going into Jim's Helles Exportbier recipe coming up next. Thanks again man for sharing!
Awesome! Looking forward to what you think. My lhbs had to order my carahell and when I picked it up he said, you know it's just crystal 10, right? Having not tasted it yet I said who knows, might be. Still haven't tasted it but by aroma when brewing... no, it ain't just crystal 10

Wow I was thinking 5% tops - will have to rethink that I guess - you have a lot more experience with it than I.

I did really well with a golden bock modeled after Glissade a few years ago.  I think I will have to resurrect that with German Lager X.

i use about 4.8% in my pils and its great. for my ofest/marzen,  i go with 50% vienna, 22.8% pils, 18.2% dark munich (15L) and 9% carahell.

edit: and the head on both these is thick and frothy, and persists very well.

i just realized why you were questioning...i read marzen not maibock in Joe's post!   agree- for dry (1.010 or less)  the 4-5% would be what I would go with also. 8-9% in marzen I have no issue getting 1.011-012 which is where I like it.

sorry for confusion..my bad.

edit: in retrospect- if following BJCP guidelines for 5A and range of 1.011-1.018, i would have no qualms about using around same % as I do for marzen and still get 1.011-1.012FG.  if you did want to go dryer than guidelines, then yes cut it in 1/2 I would say-similar to the pils.

Huh.  I walked into the store at 5:15 yesterday and they had it right there on the shelf.

I appreciated the recommendations on %.  I've never used it before.  We'll see how it goes.

Mine either. I have to order a few lbs of carahell, too. At 2-5% for me it lasts a while.

It most definitely is not your traditional crystal 10.
