I just tapped a keg of this beer, and it is damn tasty. 

I don't know if it's the chit or the step mash or what, but it pours with a really dense head; the flavor is grainy and malty; and the finish is really dry (maybe too dry) despite having an FG of 1.012.

You guys are drinking some good beers by the sound (and look) of it. I had 3 Boddington's, half of an oxidized Sam Smith's India Ale (really hated to dump it but it wasn't good) at my uncle's house for dinner and cards, and now working on a pint of a pale ale (that I brewed) at home. No German beer yet, but I may have some of my Vienna lager here in a bit. It's still young, but coming to life despite my complaints about it in the thread I had in the "Yeast and Fermentation" forum.

This Kolsch with Giga 021 is fantastic. Every now and then you get a batch you can't stop drinking, this is it. I see a summer filled with this beer.

Isn't the Giga 021 more similar to 2565 than 029 (in other words, has kolsch character) ?  And how hard is it to clear ?  BTW, nice looking beer.

Yes it is, and flavor is way better than 029 IMO. I pulled this 750ml off the keg before I added gelatin on Friday night.  It is similar to 2565 in that it keeps a bit of haze.  Taste is similar to the 2565 smoothness and wine like flavor.  I turned it down in primary to 35 for 2 weeks before I kegged.  We will see early this week how bright it is after the gelatin.

Awesome - thanks for the good info. I much prefer 2565 for its white grape/vinous character and it sounds like 021 is similar in that regard. I can deal with it taking a little while to clear if it gives me the beer I want. Sounds like I need to try this and their saison strain, too (heard good things about it, too).

It looks pretty bright pregelatin.

I know some say they have issues with wlp029 clearing, but in less than a week actually of cold conditioning and gelatin as it carbed, looks pretty good.
