American Pale Ale, made with Cascade hops that my dad grew in South Dakota...delicious! Very much an "old school" pale ale, as you might have found in a brewpub circa 1997.

Recipe etc. here: https://andybrews.com/2021/09/25/cascade-pale-ale-ii/

ive been craving an old school cascade, lb of crystal, 5.5%ABV pale ale for a while now. i have one tentatively set up for before christmas

Used imperial stefon yeast, artisan malts from dark cloud malt house in Maryland. 50/50 pils and wheat from them. Came out awesome this is probably the 20th something time Ive brewed a hefe and this recipe is a keeper. If you can get your hands on dark cloud malts I highly recommend them. The owner met me at a gas station and sold me 300 pounds so I didn’t have to drive to Baltimore. Now thats customer service

Yeah, that's gorgeous.  BB, did you hold the darker malts until the end of the mash as we have discussed?  The Mexican Dark Lager I have on tap right now was made that way and it's fantastic.

Absolutely. I have been brewing that way for ~a dozen batches now. Couldn’t be happier.

This is how I brewed it:
