Update: old information or not, I have employed the process as described on their website for the last few batches now. Each time the fermentation has started as fast as I’ve ever seen in my brewery. It only takes a few minutes to fill halfway, pitch, wait, and complete filling which, in the grand scheme, is a blip on the radar.  I’m sold.
