Beef goulash with beer

I made this on Saturday and finished it on Monday.  Much better on day two and 3.
2 lb stew beef
2 chopped yellow onions
3 chopped garlic cloves
1 small peeled potato grated
2 chopped carrots
1 very large potato peeled and chopped
1/4 cup sweet paprika
2 tbp hot paprika
1 tbp caraway seed
Salt/pepper
Lard
12 oz home brew Irish red style ale

Toss beef with salt and pepper.  Brown beef in lard in two batches and remove to plate. Cook onion, garlic and grated potato in beef pot.  When golden, toss in the spices and cook for 2-3 minutes.  Pour in half the beer and scrape everything up.  Toss in beef and rest of beer.  Water if you think you need it.  Simmer for an hour then put in the potato and carrots and cook for another 45 minutes on low.  Check liquid as this is a stew.  Serve with thin sliced green pepper over the top.  I had mine with sourdough biscuits.  Bon appetite!

Funny how food memory is. I only remember eating goulash once, at the Olde Vienna Kaffeehaus in Marlborough, Massachusetts in the early nineties. I don’t remember much about the goulash, I remember that I was there to see blues great Taj Mahal, who played about six feet away from me and my goulash.
Ah, live music in a tiny crowded venue, if only I  knew how precious that was.

There was a Sports Platz down the street from where I lived in Germany. They served the best goulash I’ve ever tasted.
