I am planning to brew the extract version of the Valhalla Honey Beer recipe found in the November/December 2019 Zymurgy Issue. I have my delicious local raw honey ready to go, and plenty of 3787 yeast that was harvested a couple of weeks ago.

Question: Is it appropriate to carbonate this style? Will the yeast even be able to do any work once the SG is down to 1.002-3 from 1.112 if I add sugar before bottling?

Looking at a couple of images from untapped, there looks to be a head on it.  How much carbonation, is the question.
Some day we'll look back on this and it will all seem funny
