Thanks for the thorough review.  This looks to be a nice mill for hombrewers...I am still using the old JSP (Jack Schmidling's product from way back), hooked up to a direct drive low rpm Ale Works motor (180 rpm or so, IIRC).  Mill gap is typically .040 and I run a HERMS set up, usually.

How'd you perform the sieve analysis? Is this similar to standard civil engineering test?

Great writeup! At $800, that's going to be a rough sell to me.

Most likely ASBC method Malt-4.

I just use a No14 and mill to 70% remaining on the sieve, 30% in the pan.

Yessir.

And for the record, you could clamp that down and up your eff% with no tradeoff!

Cool, looks really nice.  You condition the malt right?  Do you condition for the sieve test also, or just pick the gap setting and then condition it when brewing?

Any tips on where to pick up the sieves? Cheapest price I seem to find is $55/each.

I landed at my current setting after many trails to prevent stuck recirculation. Today I got 89.9% mash efficiency and 85.5% BH efficiency if I dumped the BK into the fermenter and 72.3% separating and holding back the trub — which I prefer (all measured by BeerSmith). I’m happy with that.
