What a great essay by Jk Bywaters in the Jan/Feb 2020 issue.  I’m definitely brewing this.  We do a lot of canning and preserving from the summer garden to bring summer into the cold winters (Northern Maine here), and I’ve never thought of bringing the winter into the summer!
