Need Your Opinions on NEIPA Hop Combo
« on: January 17, 2020, 09:57:31 am »
So I'm still new at this and just need some thoughts and opinions on a hop combo for a NEIPA.  I recently was able to get a small sample of these 4 I'll mention below in whole cone and rubbed them together and it smelled amazing, but curious as what others would think from a aroma/taste profile from your experience using these hops yourself or tasting them in other brews.  More this is confirmation I'm not crazy this is going to work.

60 Minute Boil with Warrior
20 Minute Whirlpool of Citra, El Dorado and Sabro
Dry Hop at 4 Days with Citra, El Dorado and Sabro
Dry Hop at 7 Days with the Same

Or is their a better opinion on the bittering hop

I haven't brewed with Sabro yet but the other two are a great combo. I'd go 2:1 Citra:El Dorado personally. El Dorado can get overwhelming quickly.

Obviously I don't know a lot about NEIPA, but is a 60 min. addition typical?  I was under the impression it's all late hopping.

I've brewed with Sabro, and have another on deck. It has meny flavor and aroma components that may not work with the fruity tropical sweet of Citra and Eldorado. It could fill in aromas and flavors that would make it great. You will have to brew it, let us know the results.

Here is a very informative podcast from some well known brewers (and beer bloggers) on the east coast that recently made the transition to running their own brewery. I have not tried brewing their hop combinations yet, but have visited their brewery a few times when I travel through Maryland. Their beers are very high quality, very well balanced and delicious. Peppered within the podcast are great discussions about hop combinations (like Citra-Mosaic) that work and others that are less ideal from their perspective. Also good tips for how to manage other factors unique to the style.

I like a 60 minute hop addition to keep the beer from getting too sweet. The Big Brew day milkshake IPA has 2 oz of colombus at 60 minutes. Scott Janish has some recipes with a 60 minute hop addition.

Excited to check out that podcast, Janish and Tonsmeire always make for a good read.
