Using Maple Syrup

I have some genuine maple syrup I would like to incorporate in to one of my stout or porter recipes and was wondering if anyone has experience using maple syrup in their beers.

I typically brew all grain and am looking for ideas on when or how to use it and how did your beer taste when you used it.

I've tried several times and found the flavor ferments out.
Life begins at 60.....1.060, that is!

I’ve had some crazy maple syrup beers from weldwerks in Colorado. My guess is you just have to use a ton. They go big with flavors and adjuncts. Not sure if they would respond but you could try reaching out to them.

Maybe they use extract or fenugreek.  I've had maple beers made with both rather than syrup.

According to everything I’ve read including the can it’s maple syrup

Almost all of the maple beers I have judged in competitions were overcarbonated and lacking in maple flavor.  This does not mean that a good maple beer cannot be made, but it does mean that most of those sugars and flavors from maple tend to be consumed by the yeast.  You would have to be careful to kill the yeast and dose the maple syrup at packaging.

I occasionally tap the maple trees around my place and use the unevaporated sap as brew water.  I’ve only made porter type ales this way,  but it’s fun and they’ve all been drinkable.  No noticeable maple flavor at all.  I’m convinced that they are healthy though!
