Kolsch grain calc mistake
« on: March 29, 2020, 01:57:52 pm »
Just started my brew day. I must not have been clear when I relayed my grain bill to my local home brew shop. Instead of Ounces for the Vienna malt part of a Kolsch recipe I’ve got pounds. I just saw my final grain bill is 12.3 pounds pils, 4.5 pounds Vienna and 4.5 pounds Cara Vienna. So I won’t have anything like a Kolsch. Any idea what I’ll end up with? I’m still using a Kolsch yeast. Thanks!

Assuming it's a 10 gallon batch. it's possible you might have a Vienna Lager.

That was my guess. I’ll finish with about 11 gallons. But no lager yeast. So maybe I’ll call it a Shelter In Place Vienna - Kolsch

That much Caravienne could be a problem.

Omit the vienna and cara-vienna for a true Kolsch beer. Those two aren't historically added.

Recipe I had called for 4 oz of cara Vienna and 4 oz of Vienna to 12 lbs Pilsner

That’s my thought.

Aside from not being anywhere near style guidelines, what other issue will I have with so much cara Vienna?

The Vienna is fine but 20% Caravienne or any crystal malt is too much for any recipe. In my opinion. Others likely disagree.
