1st time Smoking
« on: April 26, 2020, 12:18:31 pm »
Helio everyone. It is my first time smoking a Brisket. I am using an electric bulletproof smoker. I have a question. I have 2 4lb briskets in the smoker. How long do you guys think it will take to cook? Any advice is welcome. Thanks

Where are you located? When I lived in Texas a brisket would take about 8 hours at 250°F
Same brisket on Colorado takes about 12. And despite what the purists tell you, it's fine to finish it off in the oven

I cook until the internal temp is 205F. Then I take it out and let it rest 30 minutes. I wrap it in foil and put it in an ice chest under towels so it stays hot during the rest. It can stay hot for hours this way.

PS. I cook whole briskets. I have never done smaller pieces (like your 4lb. pieces).

I cook packer briskets in a WSM in 5 hours.

2.5 hours until 170*F internal, wrap, then another 2.5 hours until a skewer slides in like a hot knife thru butter.

Of course, I smoke brisket hot n fast.

...and I’m from TX if that matters.

Update. After 7 1/2 hrs, the brisket is done. I am proud of my self. I think it came out good for my first time. Thanks for the input. Any opinions are welcome. Want to ad an image but don’t know how. Any help on that?

Congrats on your first brisket! Just make sure you slice across the grain!
In the app there's just a photos, files button.
