Kombucha

Made a batch today using the Feb 2019 Zymurgy recipe.  My scoby was from White Labs.  Their website says to use a cup of vinegar which wasn’t mentioned in Zymurgy recipe.  Anyone make this before?

Never made it with a purchased Scoby, always one saved by myself or others. Adding vinegar, especially that much, seems weird to me.

They are probably recommending this because you aren't starting from a previous batch of kombucha. Most SCOBYs are started from a prior batch and have some of the prior kombucha to help adjust the pH.

If it were me, I'd just dump 4-8 ounces from a kombucha I like into the starter instead of straight vinegar. But I'm not a big vinegar fan myself, so YMMV.
