Preferred Wheat Malt

Looking for your preferred, go to wheat malt for making Hefeweizen. I have used Briess and Avangard in the past and want to try something else.

I had to go back through my notes. I have used the two you mentioned, plus Canada Malting. FWIW, no mention of any preference toward any of these.

Likely the clove and banana character of this style masks any subtle differences in the malt. Similar with Dunkelweizen.

I just brewed a hefe with WhiteSwaen wheat malt and I have no complaints. That said, hefeweizen is more about the yeast than malt.

This sounds very intriguing! I like the fact that that it is a preferred wheat for Japanese noodles and the the majority is exported for that use. Because of that fact, I am ordering some! I also like the "cream of wheat" description.
