Don't forget to save some soured wort to spray on the ceiling joists for future cool ship batches!  Best of luck - I hope it is drinkable.

When I first started this, I suggested that I was going to do that and my wife said "That would be a hard no."

My plan is to build a wooden "tunnel" that will hold the fermenter and then inoculate that. If I get really crazy, I might look around to see if anyone has published the dimensions of the room where Cantillon has their koelschip and the dimensions of the koelschip and then build something to scale.

Amazing the stupid crap I'm coming up with to stave off the boredom of being stuck at home …
