First taste of possibly my best beer yet, getting closer to the nectar of the gods.
A little hazy, very smooth, mild, semi-dry, clean, slight citrus, malt needs to come forward more,
bitterness needs a tad of a boost.
6 lbs vienna, 2 lbs white wheat might do it.  Hops are ok, need to change, don't care for
grapefruit/passion fruit taste.

Batch # 35
4.25 Gal, 90 min mash, 60 minute boil, 3 week ferment, 3 week bottle cond/carb.

5 lbs Vienna (Epiphany)
3 lbs White Wheat (Canadian)

Simcoe (12.7)
40 min .5
20 min .5
10 min .5
05 min .5

22 bottles, 1 teaspoon table sugar per 22 oz bottle, tad under carbonated, a little more time usually fixes that.

BRY-97
Pitched @ 70 degrees, let drop to 66.

I am happy for you, but you lost me at Simcoe.  That hops smells just like a tomcat litter box to me.  I can pick it out of a beer a mile away.  You must be one of those people who perceive Simcoe as resin and pine and other pleasant aromas.

+1.  Most craft beer drinkers seem to love the bobcat piss.  Not I.

I must be blessed because good Simcoe smells like young spruce tips crushed in my fingertips to me. Pine, but with bright, subtle citrus oils as an undertone.

Fairly new to the hobby/obsession/madness.
Compared to what hops are available, haven't used many of them.
Not fond of simcoe, probably won't use it again.
I think I understand your cat piss reference, citra would also be in that category ?
Using magnum and nugget in the next few batches.

Also, as erockrph has stated "good" I've had centennial (not using again)  that was good,
and centennial that I hated.  Also used citra that was good (not great, not using again)
, and citra that was thrown out.

Depends on who you get your Simcoe from and how it was handled.

Depends on who you get your Simcoe from and how it was handled.

Ted's hops from Hop Heaven have never given me cat pee. Other sources have.
