Hop Harvest

I performed a dry matter test on Centennial because the cones looked like they were ready to go.  I got 23%, though only pulled like a dozen cones  I don't have enough Centennial alone to do a 5 gallon fresh hop beer with them so I was going to add Chinook, and maybe Comet and Zeus.  They all harvest at different times though.  Am I better picking them early or leaving Centennial on the bine longer?

Put the early ones in the boil, dry hop with the ones that you harvest later.

Still another three weeks until the official start of the British harvest...

Pick them when they're ready.  Dry, vacuum pack, freeze until you need them.

Thanks for the advice. I harvested them today but only got 7oz wet.

Yep, I ended up with just shy of 2 oz dry.
