34/70 at ale temp pilsner
« on: September 12, 2020, 12:19:49 pm »
i am about to brew a "pilsner" using 34/70 and first time @ ale temps. im figured to pitch at 58-60F and leave it there until about 70% done then ramp up the temp to mid 60's to finish up. im so used to fermenting pilsners at 50F using 2 packs of 34/70 rehydrated. i guessing with the warmer temp 1 pack is all thats needed right? will 34/70 produce crisp, clean pilsner at these temps for real?

I ferment 34/70 with one pack, no rehydration, as a regular practice, even starting at 48-50F.  I think you'll be fi e with 1.

I’d use more [edit: in a 5 gal batch] above ~1.040 but many use 1.

FWIW, I’d use 80 g per hl (8 mg per l) for anything over ~1.040. I get 5.5 gal into the fermenter so ~21 l = 16.8 grams. One 11 g pack would be 65% of what I’d use [edit: in a 5 gal batch].

Yes. It’s probably the most versatile strain out there. I’ve used it in the mid 60(s)*F with great results.

Something people should know is that W-34/70 is basically the type strain for Frohberg lager yeast strains.  Unlike Saaz strains, the cold tolerance inherited from Saccharomyces eubayunus has all but been deleted in Frohberg strains.  W-34/70 grows best at 22C (72F).

so its better to go warmer with this strain?

Grows best does not necessarily equal tastes best.

I fermented a Pilsner with 34/70 at 60 degrees and it came out very lager like. It was crisp and not fruity at all.

One pack is enough as Denny stated in his post. I am currently fermenting a 5 gallon lager with one pack of 34/70 at 58F.

We have had W-34/70 fermenting down into the mid 30's. Yes, we were surprised at this as we racked the beer into the kegs from the fermenters after cold crashing.
