I was searching the recipe of "Farmer in the rye" saison using wallonian Farmhouse Yeast of Yeast bay?

Can you help  me?

which wallonian are you using? there are 3 and each is quite different

The recipe you have posted Is with french saison
the recipe is the same, just different yeast. The wallonian I is a totally unique yeast, earthy with subtle white wine esters. Not like any other saison yeast, or any other yeast for that matter. Tastes much closer to some wild sacch I have fermented with than anything available commercially
