You should be able to ferment with the canning jar attached, and the 3" dump valve open. The trub will settle in the jar. When ready to remove the jar of trub, close the valve, and remove the jar (up to 32 oz.). As long as the dump valve is not re-opened, no air is introduced.

Again, I do not own or have ever used one of these. From the description, it does not seem to me this product is engineered for LODO brewing. Which is OK for myself, many have a different opinion. However, after purchasing and using a stainless fermenter, the extra cost over this option seems like a no-brainer, for ease of cleaning alone. Again, only one opinion. I still have a plastic fermenter, but only rarely use it when the stainless one is in use. I always worry about infections when it is used, but none yet.
