How do I change the mash and sparge water volumes in BeerSmith? I have loaded the Anvil Foundry in the equipment menu and its instructing me to use a 50% to 50% water ration between mash and sparge,

You can change water volume in your mash profile

You should do more than just load a profile into Beersmith before you use it. You need to take your own weights and measures to customize that profile to your unique brewing process. It is very likely that you will not receive accurate results until you do. Look for Brian's video tutorial about building your equipment profile on his YouTube channel, Short Circuited Brewers.

I agree with Kevin.  It took me many brews before I finally dialed in my Equipment Profile in BS.  BeerSmith is a well written and powerful tool.  But it’s success is reliant on an accurate Equipment Profile.
