For lagers I like Sterling + Motueka. They both taste like their Saaz lineage, but get some citrus when used late and in larger amounts.
For English ales, I like Challenger + EKG, and sometimes I'll splash in some Centennial, Motueka or Caliente if I want some extra late hop character in a bitter.
For Pale Ales and IPAs, there are literally no bounds. Some of my favorites are Vic Secret + Nelson Sauvin, Simcoe + Amarillo (that's an old school fave I need to get back to soon), Nelson + Meridian + Motueka, and then you can add Citra and/or Galaxy to any of these to boost the oil content.
