Update - 9/26/21
Pulled a glass of this beer from the keg late yesterday. It is clearing up nicely now. And here is the "breaking news"...the diacetyl off flavor has completely abated! The krausening combined with some conditioning time seems to have worked it's magic.
The beer has a nice clean and slightly crisp flavor and mouthfeel. Thanks to everyone here for the input.
Good to hear.
Yes! And here is the clincher...my friend Dave just came over. He was given a semi-blind taste test of two Festbiers. One was the flawed example.
His comment was, "It is just a little sharp, perhaps from the hops, but it should age well".
He was then given the sample of the 2nd beer, again a Festbier, which he really liked.
After being told that the first sample was the flawed beer, he said..."Give me another one!". He was shocked at how it improved.
