The sweetness is not as expected. Need help?
« on: September 28, 2021, 02:52:38 am »
Hi, Anyone here with cider experience can assist me? My wine has a good appearance and taste, but it is not as sweet as I would like.
Any advice? Thanks!

You can stabilize and back sweeten with additional sugar.

Use unfermentable sweetener like lactose or xylitol.  Dissolve in a little water, boil for 5 minutes, cool, add to the cider until it tastes right.  Probably need roughly 2.5 to 3 ounces per gallon, but of course it's based on your own preferences.
