Based on a bit of baking/ candy making experience sugar chemistry is... complicated to say the least.

As if I didn't have enough to worry about with regular brewing now I want to start making my own adjuncts.

I've made inverted/golden syrup several times.
It's a good learning experience to do a couple of times.
In the future, I would just purchase it.

As stated many times before... Lyle's Golden Syrup while often used as a substitute is not the same. The Becker's brand I pointed to is the real deal brewers invert and is less expensive than Lyle's. Even then however it is much, much cheaper to make yourself.
