Well, just checking in on the lower pitch rate. Going from 6 g for 1 gallon down to 2 g seems to be a big difference. Whether it’s related or unrelated to the off flavors, I’m going on two days strong but not crazy fermentation, whereas in the past I would have crazy fermentation with the Krausen reaching the airlock and the die down to almost nothing in 24 hours.
