I use US-05 for lots of styles and never get peach. I've read on the forums that you get the peach flavor if it ferments at around 64F or lower.

I always got it no matter what I did.  Maybe some people just don't sense it.

I would say some people definitely don't sense it just like how a lot of people get lemon in 34/70

I've gotten the peach thing on really pale beers occasionally -- actually its been a long time since I have experienced it. For the most part it is super clean.

When there's BRY-97, there's no reason for me to take a chance on 05.

Yeah me neither. Can we maybe just leave it at some people get peach from 05 and some don't? You don't have try to change the minds of people who actually use 05 without issues. Isn't that kind of your thing?

I’ve never once noticed peach from US-05.

And I would never use US-05 as long as I can get BRY-97.

I knew as soon as I posted "uS-05" there'd be blow-back. Which is always fun! In reality most brewers find it a very clean yeast so it works for a style like a Scotch Ale. I understand it may not be everyone's first choice.
