Okay- I am having a brewfest at the house on Oct 2nd- Several brewers, multiple styles. At the end, I am planning on fermenting a California Common/Steam Beer using Wyeast California Lager 2112 and an Oatmeal Stout using Wyeast London ESB 1968. I have a fridge with a controller heat/cool. My concern is that the steam recommends 60 and the stout recommends 68 degrees for fermentation. Is there as a safe medium or should I reconfigure the brew day for beers that ferment at the same temps?
