Fermenting Temps for both Common/Steam Beer and a Stout
« on: September 22, 2010, 07:22:16 pm »
Okay- I am having a brewfest at the house on Oct 2nd-  Several brewers, multiple styles.  At the end, I am planning on fermenting a California Common/Steam Beer using Wyeast California Lager 2112 and an Oatmeal Stout using Wyeast London ESB 1968.  I have a fridge with a controller heat/cool.  My concern is that the steam recommends 60 and the stout recommends 68 degrees for fermentation.  Is there as a safe medium or should I reconfigure the brew day for beers that ferment at the same temps?

Thanks,

Bill

I'd use the fridge for a steam beer and set up a swamp cooler for the stout. 68°F should be easy to maintain.

Beer is like porn. You can buy it, but it's more fun to make your own.

The median is 64F for the CC yeast and 68F for the stout yeast but I would go with Sean's recommendation and ferment the CC on the cool side at 58F and get a swamp cooler to ferment the stout at 64ish. This way you'll be sure to get some clean CC and a creamy smooth Stout.

I agree with suggested temps.
Cal Common to start at 58F and Stout at 65F.
So answer on your question is "No you can not ferment then in the same chamber".

2112 seams to be nice yeast.
I like it.
