I forgot to turn my RO system off the other day and made more water than I need for Sunday brew day. Fortunately I fill 2 kettles simultaneously and my kettle not runneth over!! LOL
With that said, if I keg the extra water, place in my keezer, how long can I expect it to be good for brewing? Should I add anything to it? I expect to brew again in 4-5 weeks.

I would repurpose it by making coffee, tea, giving to the cat/dog, use it in the iron, ice maker, clothes washing machine, etc, etc.  I wouldn’t save it for brewing that far out.

What could happen to it? Not only is it just water, it's RO water. You're going to boil it anyway.

I recall Martin Brungard commenting on this years ago. I believe he said it is very stable.

No different than the drinking water sitting on the grocery shelf.
