The one I learned as a kid was:

Beer and wine, that's just fine.
Beer and whiskey, now that's risky.

It's always seemed to be true but I support the "water helps" information.  

I've also learned to listen to that little voice you hear when the next drink is taking you over the edge.  If you hear 'I don't know if I need another one' in your head (not from your wife) you probably don't need another one.  Pour a glass of water instead.

The general rule of thumb is to quit drinking when you are sloshed.  Doesn't matter what I drink, if it's shots or wine or beer.  At the hour I find myself drunk off my ass, if I stop drinking immediately, I'm "in the clear".

I can drink all day & night - beer &  liquor but when that innervoice says your done I stop drinking.

I always thought the problem was that after drinking beer you're more likely to drink the liquor faster, but if you start with liquor you're more likely to drink the beer slower.

Either way, I agree it's best not to mix and to hydrate, especially at altitude. :)

I agree. Whatever I start with sets the pace, so as long as the ABV of my later drinks is lower than my early drinks, I am usually in the clear.

There goes my plans for adding a Vomitorium to the house... :P

I think there's other factors also. Mood. Fatigue levels. Any food ingested and so forth. The same amount/type of drinks can produce different results on different days ending in a hangover, bouncing out of bed or somewhere in-between.

One thing I've learned is not to indulge too heavily early in day I have nothing to do. Getting a hangover before bed-time is awful. I'll wait till evening usually to have any alcoholic beverage as a general rule, though it doesn't always work out that way. ;)

I don't think there is a natural reason for the difference, but a behavioral one, as others have mentioned.  Liquor is the "dangerous" one which can be too quickly consumed, and if you start with beer, get used to drinking, instead of sipping, and have your inihibitions relaxed, your more likely to consume the spirits faster and in greater quantities than you would otherwise.

Water and moderation.  Personally I'm all in favor of "mixing"...a shot of akevitt before dinner, beer or wine with dinner, etc.  If I'm having more than one drink its nice to vary it up.

+1 to that. I like to have maybe a martini or something on the rocks before dinner. That way there's still room for food. And it seems to stimulate the appetite. The danger is getting carried away and forgoing the meal.
