Kulmbacher schweizerhof-bräu - anyone remember this beer?
« on: October 18, 2022, 01:07:33 pm »
Does anyone remember this beer?

Any idea how to clone it?  Especially the hops.  That's where I run into too many variables, types, whether to use a certain variety, and also which hops were around when this beer was first brewed?  From what I can find, they started making Schweizerhof-bräu around 1764, but discontinued it around 1990.
It seems to have picked up the Kulmbacher name on the labels, around 1982.

I've been trying to recreate this beer for many years.  I can give a detailed description of what my taste memory has on this:
First taste - just an underlying, very pronounced, but pleasant bitterness, which quickly goes away and is
followed by a wonderful malty flavor, which in a second or 2 later becomes enhanced by a delicate hop finish that blends so well with the malt, that it becomes one flavor.  The finish is possibly Mittelfruh, but I am not 100% positive.  I have tried all types of bittering hops and what was used to impart only bitterness in the initial taste, has eluded me for many years.

Any ideas would be hugely appreciated.
