I think some of these studies are done with lagers in mind, not ales. I brew porters that use brown malt and large percentages of crystal malt and they turn out very tasty to my pallet. I recently brewed a dunked that I used under 5% of Proximity Malt Cara Munich and it was harsh and bitter. Very much style dependent.
