Its been a hell of a lot of work and a hell of a lot of fun. The brewing part has gone pretty smooth except for the fact that the water where I brew at now is a lot different than the water at my home and changes vastly from day to day - my pH is all over the map and requires some serious wrangling to bring it under control - we will be getting a RO system before too long. And the kegging has been a challenge and a great big learning experience. I've ended up screwing up a bunch of beer trying to get it into kegs.

One trick I learned - if your pH is high and you brewed yesterday you can use a small amount of spent grain to lower the pH. Works like a charm!  :)

Damn your nosy!  ;) I mentioned it before but its been a while. essentially a 1.5 bbl brewery back to back batching into 3 bbl fermenters. We also have 4 blickmann 42 gal. conicals for specialty brews. Going to ride it out like this for a while to test the market. Not planning on making any money right now, just float the ship.

Its a lot like having a big homebrew system. I got tired of brewing the same thing over and over again for the last 2 weeks so last week I went in and brewed a Tripel. Right now its a lot of fun being small. I'll be doing a lot of one off batches.

Yeah - the problem was 2 fold. First, we had a wind screen on that was inhibiting the air intake (since initially we were brewing outside). Second, I had to play around with the jet height. After I fixed those there was almost no soot to speak of. But, we are all electric now - which is working way, way better than I ever anticipated. No gas at all right now.
