OK...... For every question you ask you get an array of answers. The learner's task is to distill (no pun intended) an answer that is defendable, and that he/she can live with, as in the end everything is YOUR decision.

So based on the words of more experienced people here, in the LHBS and other places I opened her up again today, took a reading (1010 again, although I calibrated the hygrometer at 60º and it reads a few points low, so call it 1012, still a good number) and then racked the whole thing to a 5g carboy.

Most of the foam was gone, and it was a nice clean transfer. I sanitized the entire county, including myself up to my elbows, and got nice and organic "in there" feeling the trub and carefully holding the auto siphon just above it. (Someone will now come along and tell me you should never touch your beer, but I found it a very nice and earthy experience......)

So, it's now in a container I can see through (MUCH better, I will never ferment in a bucket again) with a Fermometer on it (62º in my office on the floor) and NOW I will wait 'till things clear up.

BTW, it tastes great!

Ah, I see your problem. You need to use a hydrometer. A hygrometer measures relative humidity.  ;D

DOH! OK, the relative humidity in my beer is 1010...... what does THAT tell you?

OK, now that I can SEE what's going on I'm seeing little off-white clumps that are forming and slooooooowly sinking to the bottom. I am assuming that this is flocculation and that when it stops my beer will be clear?

This is wild, you can SEE it clearing..... 8) With a small LED flashlight I can now light up sinking clots that are 2-3 inches in from the side of the bottle as they sink....this morning I was only getting 1/2" in.....

No, I don't have to much free time. Need to go to work this afternoon and will be back Friday. May have a chance to have a "research pint" at the Lass O Gowrie.....

Can't wait to see what it looks like on Friday.

Well, it looked the same as when I left, so I figure it's done. In the keg, 25lbs of steam. All ahead. I've got to get something going out of that tap. Sunday is brew day and first draft day.....

Las O Gowrie had a nice mild..... but also Leffe on tap...... that was easy. ;D

I made BEER! First batch ever, kegged, in the keggerator........nonchalantly stroll up and pull myself a home brew...... There are people with a shidload more money than me that aren't half as RICH as I am tonight!!!!!!!! (hic)

OK, it will probably take a little more CO2, you're looking at 5 minutes of gentle rocking and another 6 hours at 25 psi, now down to 10.....so over the next 48 it will probably take a bit more which will give a better head (don't even GO there) Meanwhile the taste is good, so is body and  mouth feel. And I KNOW there's alc in it...... hic. ;D

It's interesting..... for decades all this stuff was lost, except for vinyl and cassettes (I can explain) in my collection.... Now suddenly all this stuff is appearing on ewetoob...... from what? 8mm tapes? recordings hiding in studio archives?
