I think it might hit 68F here today. :)

It's cooler, cloudier, and wetter than it should be this time of year, but it's better than the temps a lot of you are dealing with.

This year's weather is really messing with the crops.  We are usually freezing sweet corn about now but the ears have been so small this year it doesn't make any sense to pay $6/baker"s dozen for corn.  The corn we've bought so far is less than half as big as past years.

If the later corn isn't better we won't bother to put up corn at all.  I'll really miss sweet corn in January.

It's been about 2 months with 100 degree temps and high humidity with virtually no rain for our rainy season. My corn turned out poorly.

I'd love to pay $6 for a baker's dozen.  How does a buck an ear sound?  ::)

Remember we in Iowa live in the middle of one big corn field.  8^)

You'd be amazed at what's called "fresh fish" here and what they charge for it.  Supply and demand, supply and demand.

Corn here is quite literally a buck an ear. 1,50e for a plastic-wrapped package of two ears.

Meanwhile, there are fields all around me filled with feed corn.

Can we eat feed corn? Well, I'm planning on finding out soon.

My mother-in-law grew up in Stuttgart in Nazi Germany.  She said corn was considered only good for silage back then.  She and her brother used to sneak into the corn fields and eat raw corn.  She said it tasted wonderful.

She married my father-in-law and moved to New Jersey in 1955.  I guess the weather was better in New Jersey.

Phil, you can eat field corn, but the taste is not so good, and I do not recommend it.  If you look at the kernels on a new ear of field corn, they will look more like sweet corn, but when mature they have a dimple.  Field corn is sometimes called dimple corn.  The starch content is much higher, and the sugar is lower when the ear matures.  The flavor is then "starchy", and the kernels are tough.

I've eaten tonnes of field corn but like Hop says, it gets starchy.  That's the difference.  In France, you may find that the field corn is even starchier because a lot of the corn in that area is "Flint" type corn as opposed to dent corn.  Just pick it when it's really young and milky and eat it right away because the sugars degrade very rapidly.  With enough butter and salt, it'll be fine.  I assume of course that you've asked permission to pick some...

Can I do nixtamalization and fix it? Great info though!
