yeah, what he said.... made the stock the next day. made a big pot of split pea soup with it last week, using ham also left from turkey day. had the stock frozen & finishing it up with the lentil soup today.
when I make soup, I use a large kettle and freeze multiple containers of soup for later use. thinking man's lazy approach. likes me good food, likes it even better with little work. it's not much more work to make a huge pot of soup than a little pot. a bit more knife work, but I actually enjoy that part since I've now got a set of shun knives (thanks to woot). once the big pot's done & the soup is in the freezer, I can look forward to multiple yummy meals with little more than heat & eat. soup along with some dark bread & good butter, a bit of cheese, and some beer. works for me.
