First Kegging!

Good day folks!   I just kegged my first beer, a Belgian dubbel, i'm soooo excited. Just a few questions really.., i've heard so many different method on force carbonation and its really quite overwhelming.  I figured the set it and forget it method is the best move, so i set it to 7 psi in my fridge which is about 38 degrees Fahrenheit.. is this a good move, and if so how long shall i wait to tap the first pint?!

I like the set and forget method.  Your settings will give you about 2.1 volumes of CO2 which seems appropriate for the style.  I usually leave it for a week before pulling a pint or two.  

So, good move and congrats on your first kegging!!!

I prefer set and forget too, I think it's the easiest way.  Try it after a week, but give it two before you decide to up the carbonation.  If you're in a hurry you can shake the keg without changing the pressure, and it will carbonate a bit faster.  Using a carbonation stone will also make it carbonate faster, but it's not needed.

after the initial week or so after saturation how much should i up the psi to?

You don't, unless you decide you want it to be more carbonated.  Give it 2 weeks at least if you're just setting and forgetting.  If after that time you think it needs more, then bump it up 1 psi for another week.  Keep doing that until you get the carbonation level you like.  Take notes so you don't have to play around with it as much next time.

I couldn't wait for my first one to carbonate, so I set it to 20, gently rocked it for about 20 minutes, then left it for 24 hours and then dialed it down to 9. It was drinkable after 48 hours, but truth be told it was not properly carbonated until about a week..... unfortunately it was empty after 8 days....... Still tasted damn good.....all of it. Just need to brew more and have more cornies ready to go.

I'm pretty impatient. I usually set it to 30psi for a few days. Then dial it back to serving pressure 10-12psi. Works good for me.
