You should make some dark beers some time. 
We do brew 1 or 2 Belgian Strong Dark Ales per yr for winter time drinking.
Weather never changes there? Looks like the grass gets brown some times.

We brew on average once per week-> practice makes perfect.
The more I brew the better the beer, the better the beer,the more
I must brew...

Most of the recipes are just tweaked from the basics, fine tuning really.
