What's your first brew for 2011?
« on: January 01, 2011, 02:04:37 pm »
What does everyone out there have planned for their first brew of 2011?  I'm planning to kick off 2011 with a big Tripel and hoping to use the yeast cake from that to brew a quad

Happy New Year!

That Chamomile Pale Ale sounds pretty interesting.  Have you made it before?  What kinda hops?

This is the first time making it.  I had some extract and some homegrown hops that I wanted to use.  I am using homegrown Fuggles and Hallertau.  I steeped 10 chamomile tea bags in 1.5L of hot water for 5 minutes then added it to the wort after I removed it from the heat.  If you would like the recipe let me know and I will post it.

I have two beers that I'm going to brew this weekend.  Today will be the Innkeeper, and a THA clone for tomorrow or Monday.

Not so much a recipe as some tasting notes.  Let us know how it turns out.  I've had some meads that used chamomile tea, but never a pale ale.

I can definitely do that.  It will be interesting to find out what type of flavor the chamomile adds to the beer.

My second go at a Classic American Pilsner.  Almost 10 gallons split into two for some yeast trials.

I'll be brewing another batch of my strong Belgian ale with cherries tonight. I'll also be racking my IPA and bottling another batch of tonights brew.

Schwarzbier.  This will be my first.  Once you go black... ;D

edit: Actually, I may be brewing my Winter Warmer again.  I took a chance on a yeast I hadn't used before when I originally brewed it last month.  It didn't turn out so well. >:(
