Red beets, I assume?  I had a great salad last night with roasted golden beets, but I think red would work too.  Trim, peel, cut into bite size pieces, toss with olive oil, sherry vinegar, salt and pepper, and roast.  Let cool.  Simple vinaigrette with sherry vinegar, olive oil, shallots, salt and pepper.  Toast some walnuts in a pan with walnut oil, salt and pepper.  Shred some romain and endive, put beets on top,  add some orange segments, drizzle with vinaigrette, top with crumbled goat cheese, walnuts, chopped garlic chives.  A bit involved, but really good.  Restaurant quality, I thought.

When ever I work with the golden beets they start to turn black on me. I assume it's because I roast them with just olive oil, next time I have to try with a little vinegar.

The only color developed on the beets I did was from the roasting.  They retained their nice gold color otherwise.

One of my favorite things to do with red beet is cream of X soup. Tastes great, looks cool. White bowls required.

Reminds me that denny's in Japan boasts of their famous roasted beets. I keep meaning to eat there to see how different it is. I don't remember beets from any US denny's.

I came back from vacation and apparently I planted tumbleweed seeds.  My entire garden is full of 5' tall tumbleweeds that cannot be removed until we have major rain.  The roots on these things go a foot down and this year my soil is essentially adobe since there's been no rain since September.

I have squash! And cucumbers! And my pumpkin plant is taking over. Hurray! Gardening is fun.

Pretty soon we'll have to start a canning thread of course.

My corn is coming along nicely. Looks like there'll be another nice crop of tomatoes too. I can't keep the grackles from pecking my figs as each one ripens. I thought the poor things were starving due to the drought. Evidently not. >:(

My pecan tree is bowed down with a huge crop of nuts. Sigh. The squirrels will get those...

Technically, these were planted last fall, but what the heck.

Mmmmm.

Yeah, I forage them wild. But they're long gone already here. The leaves make a fantastic pesto, which I have several tubs of left in my freezer.
