Just racked an Altbier from primary to keg, Kai's, except the yeast. I couldn't get Wy1007, and I substituted WLP029 German Ale/Kolsch Yeast. It did a great job, 1.047 to 1.012, clear. I'm asking your advise though, should I harvest this yeast, or next time use Wy1007 German Ale Yeast. I've seen you guys rave about Wy1007. Does WLP029 pale in comparison?
